Satay (Barbequed Beef / Chicken with Peanut Sauce) : Asian Food Fest (Singapore)

Jom kita cuba resepi sate gaya masakan Mrs Leong Yee Soo dalam bukunya The Best of Singapore Cooking. Mrs Leong Yee Soo gunakan daging, tapi Amie gunakan dada ayam. Apa pun resepi asal Amie tuliskan di bawah nanti. Amie teruja nak cuba cara sambal kacang dalam resepi ini, kerana kacang tanah yang telah ditumbuk, direbus terlebih dahulu dan kemudian barulah ditumis bersama perencahnya.
Mari kita lihat resepi dari Singapura ini.
Ingredients
Meat preparation:
1 kg beef ( or chicken) chilled and cut into thin pieces
A
10 shallots
2 cloves garlic
1/2 thumb - size piece turmeric or 1/2 teaspoon turmeric powder
4 stalks lemon grass, slices
2 slices galangal
B
2 tablespoon coriander seeds
2 teaspoons cumin
C
1 teaspoon dark soya sauce
1 teaspoon salt
4-5 tablespoons sugar
4 tablespoons oil
Method:
1. Pound A to a smooth paste.
2. Fry B over low heat for 5 minutes, till fragrant. Pound to a finr powder while still hot.
3. Mix C in a bowl and add to pounded paste.
4. Rub paste mixture into the beef. Sprinkle the coriander and cumin powder over the beef and mix thoroughly. Marinate beef for 1 hour. Thread seasoned meat on to satay sticks or fine metal skewers. Grill over charcoal fire or under hot grill. Baste with oil and water mixture to keep beef moist.
Peanut Sauce:
455gram freshly roasted ground peanuts
225ml oil

15 shallots
8 cloves garlic
2 stalks lemon grass, thinly sliced
20-30 dried chillies, deseeded, or 4-5 tablespoons chilli paste
4 thin slices galangal
B
2 tablespoon salt
8-10 tablespoons sugar
4 tablespoons lime juice or 4 tablespoons thick tamarind water
Method:
1. Pound A to a fine paste.
2. Boil pounded peanuts with 900ml water over low heat till thick. Stir constantly for about 1/2 hour. Set aside.
2. Heat oil in wok and fry pounded paste till fragrant and oil seeps through the paste.
3. Add paste to peanuts mixture. Add B. Boil sauce over low heat for 5-7 minutes till sugar is dissolved, stirring constantly. Cool peanut sauce and serve separately with barbecued beef (chicken) and garnish
Inilah hasilnya! Nampak cantikkan sambal kacang tu..... Apalagi! Tak sabar-sabar nak makan dengan sate. Jom ambil sate dan kita celup!
