Pernah dengar perkataan 'kates?"
Biasanya kita dengar nama lain bagi betik ialah papaya tetapi MIL panggil kates. Kadang-kadang disebutnya sebagai kepayas. Pada Amie, betik atau kates ini sangat istimewa sebagai salah satu lauk di antara pelbagai lauk dalam hidangan semasa kenduri-kendara keluarga sebelah Encik Suami. Jarang sangat Amie tidak jumpa masakan betik yang mereka panggil Sambal Goreng Kates. Kadang-kadang tertanya-tanya juga, di mana rasa pedasnya sehingga dipanggil sambal dan mengapa pula ada 'goreng'nya, sedangkan masakan ini ditumis.
Akhirnya Amie akur, kita perlu terima walaupun ia membawa maksud yang agak berbeza dengan kebiasaan budaya yang kita amalkan. Setelah Amie terbaca pengenalan Harum-Haruman si Bunga Pala dalam buku masakan Hidangan Tradisi Pulau Pinang, maka Amie simpulkan betapa perlunya kita menghormai tradisi kaum lain. Kita tidak faham, dan kita tidak turut serta 'membina' tradisi mereka, jadi sebaiknya kita jadikan sebagai satu perkongsian ilmu dalam dunia masakan. Dalam buku masakan yang dihasilkan oleh Puan Hasma Basir, Amie petik kata-kata berikut:
Sebagai sebuah dokumentasi tradisi, buku ini cuba merakamkan semangatnya menerusi penggunaan diksi tempatan. Ini terlihat dari segi nama masakan, kaedah memasak serta bahan yang digunakan. Sebagai contoh, 'gulai' dalam penggunaan masyarakat Pulau Pinang adalah khusus merujuk kepada masakan yang disebut 'kari' di tempat-tempat lain di negara ini. 'Rendang' pula ialah istilah umum bagi kaedah menggoreng. Oleh yang demikian, para pembaca akan mendapati 'ayam rendang' bukanlah masakan yang menggunakan santan dan ditambah dengan kerisik bagi menghasilkan cita rasa yang mewah berlemak! Bahkan ikan boleh juga direndang!

Jadi, Sambal Goreng Kates merujuk kepada masakan tradisi Melayu Cocos yang menggunakan kaedah menumis serta penggunaan cili besar dan bukannya cili padi atau cili kering.
Sambal Goreng Kates ini Amie masak kelmarin petang. Agaknya betik yang dibeli tidak terusik dari pagi, jadi bila lewat petang baru dikupas, rupanya betik yang pada mulanya mengkal dan separuh masak sudah mulai masak! Sebaiknya kena gunakan betik mengkal untuk menghasilkan Sambal Goreng Kates yang sedap seperti yang MIL pernah ajar semasa hayatnya.
Inilah rupa sebiji betik yang Amie hiris untuk dijadikan Sambal Goreng Kates. Ikut tradisinya, betik akan dimasak dengan tambahan mempedal dan hati ayam yang direbus terlebih dahulu. Namun begitu menurut MIL, kalau tak ada bahan itu, boleh juga digantikan dengan bahagian daging ayam yang disukai. Amie hanya terjumpa beberapa keping mempedal ayam bersama jantungnya yang sudah bercerai dari hati. Jadi, Amie tambahkan kepingan daging ayam
Ini sahaja bahan asas yang digunakan untuk menghasilkan Sambal Goreng Kates.
Hirisan bawang dan cili.
Mempedal ayam dan daging ayam.
Amie gunakan 1 sudu kecil pati asam jawa dan bancuh dengan sedikit air. Kata MIL Sambal Goreng Kates tak menjadi tanpa asam jawa!
Bahan-bahan:
1 kg betik / katis mengkal - kupas kulit dan hiris memanjang
1 cawan mempedal - hiris ikut saiz yang digemari - rebus hingga masak - toskan
1 cawan potongan kecil daging ayam
4 biji cili merah - hiris
4 biji cili hijau
3 ulas bawang putih - hiris
5 biji bawang merah - hiris
1 sudu kecil pati asam jawa - bancuh dengan 1/2 cawan air
2 cawan air
garam / perasa pilihan
minyak
Cara memasak:
1. Panaskan sedikit minyak dan goreng bawang putih serta bawang merah hingga wangi.
2. Masukkan hirisan cili merah dan cili hijau dan goreng hingga layu.
3. Masukkan mempedal ayam dan daging ayam. Kacau rata.
4. Masukkan hirisn kates / betik.
5. Tambahkan bancuhan air asam jawa dan gaul rata.
6. Masukkan air dan kemudian tutup masakan. Biarkan mendidih dan kuahnya mula pekat.
7. Perasakan dengan garam / perasa pilihan.
8. Tutup api dan sedia untuk dihidangkan.
